Chicken Quesadillas

  •  1 diced onion
  • 1 chopped bell pepper
  • 1 handful of sliced mushrooms
  • 2 tbs diced jalapenos
  • salt to taste
  • 2 cups shredded cooked chicken
  • large tortillas
  • sharp cheddar chesse
  • 1tsp each chilli powder, paprika & garlic


Season & saute all vegetables. When vegetables are almost done cooking add chicken and stir until chicken is warm & throughly combined. Layer cheese on a tortilla, add chicken mixture and top with more cheese. Brown in the oven on 325 degrees for 7 minutes, turn over and brown for 7 more minutes. Remove from oven, cool & cut with a pizza slicer.
