Fish & Grits with peppers, mushrooms & onions

The fish has a touch of lemon which seems to bring the meal all together. The veggies are spicy & loaded with flavor.  And the grits….I always add plenty of cheese & a dash of fresh ground pepper. Yummy!


Tilapia (4 servings)

  • 1\2 tsp salt
  • 1 tsp garlic
  • 1 tsp oregano
  • Juice of 1 lemon
  • 2 TBSP olive oil


  • 1 package mushrooms
  • 1 onion
  • 1 pepper
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic
  • 1 tsp salt
  • 1\2 tsp cayenne pepper


  • Cut & slice vegetables.
  • Add the chili powder, paprika, garlic, salt & cayenne pepper.
  • Next, season tilapia with salt, garlic and basil. Sprinkle with lemon. Place tilapia in a well oiled baking dish. Drizzle with olive oil. Bake for 10 minutes on 400 degrees.
  • Prepare grits according to instructions. When grits are done, add salt & pepper to taste & for extra flavor add in cheese to taste.
  • Meanwhile, oil a large pan & stir fry vegetables.
  • Don’t overcook vegetables.
  • Plate it & serve. Enjoy 🙂
