Chicken Quesadillias With Black Beans & Rice

This is a fun meal to eat because you can eat with your fingers! Well for the quesadillas anyway 🙂 And it’s not just a quick fun food, it’s very tasty!

Ingredients

  • 2 chicken thighs
  • 2 cans of black beans
  • 4 flour tortillas
  • A handful of mushrooms
  • 1 onion
  • 1 bell pepper
  • garlic powder, chili powder, cumin, salt, paprika – to taste
  • 1 package shredded cheddar cheese – use however little or much you want
  • Rice

Chicken Quesadillas

  • Season chicken with salt, pepper & garlic. Pan fry. When done let cool.
  • After the chicken has cooled, cut into bit size pieces. Then set aside.
  • Cut & slice the vegetables. Season onions, mushrooms and bell peppers to taste- with salt, chilli powder, garlic, & paprika. Then sautee & set aside.
  • Add a thin coating of oil to each side of the tortilla. This will prevent it from getting dried out before the Quesadilla is done. Put a generous layer of cheese on your first tortilla. Sprinkle salt, garlic, chili powder & paprika over the cheese. Spread an even layer of vegetables & chicken over the tortilla.   Sprinkle salt, garlic, chili powder & paprika over the chicken & vegetables.  Now add another generous layer of cheese & top with a tortilla.
  • Bake at 400 degrees on the top oven rack for 10 minutes on each side. The tortilla will be very hot when you take it out of the oven. Let it cool for about two minutes. Cut the tortilla into four pieces, the same way you would cut a pizza or pie.

Rice

  • Prepare rice per instructions. When the rice is complete add a small drizzle olive oil & add pepper, garlic & salt to taste.

Beans

  • Open two cans of black beans and drain. Heat them in a pot with a drizzle of olive oil & a pat of butter. Season with diced jalapeños, onions, cumin & salt. Cook for five minutes.
