Breakfast doesn’t always have to have a touch of sweetness. In fact, less sugar is better for stable blood sugar levels. So I’m always looking to add something to the breakfast menu that is savory instead of sweet. These are so melt in your mouth good, that I want to get up & make them right now!
1 large zucchini, grated
1 large egg
1 cup flour (white or whole wheat)
1/2 cup parmesan cheese
1/4 feta cheese
1/4 cup mozzarella cheese
1/2 tsp salt
1/2 tsp pepper
1 tsp Italian seasoning
Combine all ingredients. Mix thoroughly.
Coat large pan evenly with a thin layer of oil. Heat the pan.
To make the cakes use a 1/4 cup measuring bowl to make sure each cake will be about the same.
Pour the batter onto the sizzling pan. Do not flip the cakes over until you see bubbles form and begin to pop.
