Baked Oatmeal

Breakfast Bites

What I like about this recipe is that it’s a great do ahead breakfast that actually tastes good! Now, I’m picky about oatmeal & I don’t like it mushy! I like this baked oatmeal because it has a much better flavor than stove top oatmeal & the texture is just right – not dry – but not mushy! So if you are in the mood to add something else to your morning meal, this is a great choice.

Ingredients

  • 2 cups rolled oats
  • 1/2 cup almonds, walnuts or pecans
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 egg
  • 2 tbsp unsalted melted butter
  • 1 1/2 cups of milk
  • 2 tsp vanilla
  • 2 bannas or 2 small apples
  • 1 cup fresh or frozen berries

Directions

  • Bake in a greased 8 inch square baking dish on 300 degrees for 30 minutes.
  • Slice the bananas or apples very thin and arrange on the bottom of the baking dish.
  • Sprinkle the berries over the fruit. Set aside.
  • In a bowl, combine the oats, nuts, sugar, baking powder, cinnamon and salt. Set aside.
  • In a separate bowl, whisk together the egg, cooled melted butter, milk and vanilla.
  • Cover the fruit evenly with the dry ingredients
  • Pour the wet ingredients evenly over the oat and fruit mixture.
  • Bake for 30 minutes
